Baked with passion, personality, and damn good dough. What started as a small pop-up has quickly taken on a life of its own - bringing New York–style bagels to the Windy City, one drop at a time.

how to order
01. The Drop
Every Tuesday at a random time, orders will go live on our Hot Plate link, posted via our text alerts and Instagram Stories. Our bagels sell out fast, so we suggest blocking your calendar and being chronically online all day for your best chance.
02. Place Order
Orders are placed on our Hotplate link here. Signing up for text alerts or Instagram notifications are the quickest ways to be informed of a drop. Orders can be placed for Saturday or Sunday pickup (May vary weekly based on availability). Limit one four-pack per customer.
03. Pickup
Your hand-rolled, freshly baked bagels will be available for pickup at Pompei in Little Italy. Simply arrive during your pickup window (street parking available), collect your order and enjoy your Holey moment!

Hey, I’m Jake—
Founder, baker, and lifelong bagel lover.
Holey Dough & Co. started back in March 2024 after I got laid off from my job. With some extra time on my hands (and a whole lot of curiosity), I turned to something that’s always brought me comfort - baking. One bite of a mediocre local bagel made me wonder: why doesn’t Chicago have bagels that can go toe-to-toe with the ones in NYC?

I started experimenting out of my apartment baking bagels the traditional way - slow-fermented, boiled, and baked on bagel boards for that classic bite. I shared them with friends and family, and before long, they were landing in the hands of strangers. The feedback? “Holey sh*t, these are amazing.”

My first drop launched in June 2024 and sold out in minutes. Since then, every pop-up has done the same - a testament to the community that’s formed around a shared love for something simple, familiar, and done right.

The goal? Bring the best bagels to the city that deserves them most. Made by hand, baked fresh, rooted in tradition, and fueled by the people who keep showing up for more.
